Charcuterie Course - Saturday 30th June 2018


Have you always wanted to make your own great tasting charcuterie at home but not known where to start? Join us for a one day charcuterie course, led by The Real Cure's award-winning Head Charcutier and company founder James Smart, where you'll learn the skills needed to make your very own charcuterie.

You'll learn the key principles of making cured whole muscle products such as coppa ham and pancetta and you will make your own bacon, trout and chorizo. You will leave with several tried and tested recipes so you can continue your new found skills at home. You'll also take home your very own cured bacon, trout and we'll send your chorizo to you in the post 6 weeks later.

  • Learn the principles of curing, fermenting and air drying
  • Learn how to cold smoke at home, including building your own cold smoker

  • Prepare and cure your own bacon to take home

  • Learn the principles of curing fish and smoking fish

  • Make your own chorizo sent to you 6 weeks later

  • Make you own pork sausages to take home on the day

  • Take home a collection of recipes to test your new found skills

The day begins at 10am with coffee and Real Cure bacon rolls and includes a lunch of charcuterie and local cheeses ending at 4pm.

The course is held at Tisbury Cookery Studio, Station Works Road, Tisbury, Salisbury SP3 6QU. Nearest station Tisbury.

Please wear casual clothes as the course is hands on however aprons will be provided. If you have any allergies please notify us ahead of the class.
