RECIPE: CLT Sandwich

charcuterie lettuce & tomato sandwich

We have added a spin to the classic BLT and curated a CLT instead. With three layers of focaccia bread, nduja butter, bresaola and venison chorizo, with added slices of tomato, leaves and a dollop or two of chipotle sauce.

INGREDIENTS

  • 6 slices of focaccia

  • 55g bresaola

  • 55g venison chorizo

  • 2 tsp nduja whipped into salted butter

  • Handful of lettuce leaves

  • 12 cherry tomotoes, sliced

  • 2 tsp chipotle sauce

METHOD:

STEP 1

Spread each slice on one side with the nduja butter.

STEP 2

Split the fillings in two, and layer up your sandwich. We went for lettuce, then bresaola, more bread, chorizo then tomatoes.

STEP 3
Spread a good amount fo chipotle sauce on the underside of the top piece of focaccia.

STEP 4

Squeeze together and tuck in.
