DORSET FARMS COME TOGETHER

At The Real Cure, we love nothing more than working with other local producers who share our passion for craft, flavour, and provenance. Having enjoyed the blue cheese from Woodbridge Farm — the home of Dorset Blue Vinny — for many years, it felt only natural that when we looked to create a new salami flavour, we’d turn to their award-winning cheese for inspiration. The result? A salami that’s as unique as the county it comes from. 

DORSET BLUE VINNY AT WOODBRIDGE FARM

Nestled between Bishops Caundle and Lydlinch, Woodbridge Farm has been home to the Davies family for over forty years. Farmer Mike, along with his daughter Emily and son Richard, proudly revived a 300-year-old recipe and brought Dorset Blue Vinny back to life — once again making this iconic cheese on the very farm where it originated. Their Holstein Friesian dairy cows are a familiar sight as we drive past, heads hanging lazily over the walls of their parlour, and their on-farm honesty shop is a local gem. Painted in the instantly recognisable Dorset Blue Vinny blue, it’s open early till late, stocked with everything from milk and cheese to sausages, soups, preserves, and fresh produce — honest food from honest people. 

A UNIQUE SALAMI

Like all good collaborations, ours began with a shared love of good food. Whenever we tucked into a board of The Real Cure charcuterie and Dorset Blue Vinny, we’d always find ourselves topping a slice of salami with a nugget of blue cheese and a sliver of fig — a simple combination that turned out to be an epiphany. Sweet, savoury, creamy, and complex all at once. Naturally, we set about capturing that perfect bite in a salami. 

MAKING CRAFT SALAMI

In our Dorset Blue Vinny & Fig Salami, the natural blue cheese culture from the cheese add to the curing of the meat. The living Dorset microflora gently ferments the salami, creating a deep, savoury richness balanced by the sweetness of fig and the silky, creamy notes of the cheese itself. 

Even the cheese trimmings play a part: small off-cuts from their large rounds, perfectly good but too uneven to sell, are put to delicious use in our recipe. A beautiful way to reduce waste and celebrate the full circle of farm-to-plate food. Something they do on-farm as well, making their delicious blue cheese soup.
