Pepperoni is a variety of spicy salami often made from cured pork and beef, seasoned with paprika and chilli peppers. At The Real Cure we make our pepperoni with Wild British Venison. We coarsely mince boneless shoulders of wild deer with pork fat, red wine, salt, chillies, and caraway seeds to create a subtle aniseed flavour to complement the spice. We pipe this delicious mix into a sausage casing then smoke each pepperoni over oak for 3 days before air drying. Our Wild Venison Pepperoni is equally delicious on pizzas as it is on a charcuterie board.

Pepperoni is not entirely pork. Most pepperoni’s are made from a mixture of dark meat; like beef or venison, and pork. We harness the wonderful properties of the back fat from pigs and mix that with pork shoulder and beef to create an authentic pepperoni.

Pepperoni is an Italian-American creation, invented by Italian immigrants in New York City, and unlike many other cured meats whose origins are many hundreds of years old, it is a bit of a newbie on the block, appearing in the early 1900s.
