At The Real Cure, we’re passionate about flavour combinations that really bring our charcuterie to life. One of our favourites is fennel salami, and we season ours with white pepper – a timeless pairing that balances the rich, savoury depth of cured pork with the bright, aromatic lift of fennel seeds.

Fennel has been treasured since ancient times, originally found growing wild around the Mediterranean. Its flavour is instantly recognisable – subtle, clean notes of aniseed that cut through the richness of the meat without overpowering it. When minced with pork shoulder to make a salami, fennel transforms each bite into something refreshing, layered, and just that little bit moreish.

We love the way fennel seeds fleck through the meat, adding texture as well as flavour. Every slice carries those delicate bursts of aniseed warmth, making this salami as beautiful to look at as it is to eat. It’s a combination that has stood the test of time in Italian charcuterie traditions – and one we couldn’t resist making our own here in Dorset.

Enjoy it simply with good bread and a glass of red, or build it into a sharing board to show off its unique character. Either way, Fennel Salami is proof that the simplest ideas, done well, are always the most delicious.
