Cherry wood delivers a richer, fruitier smoke than most native wood dusts and chips, creating a warm sweetness that gives a beautiful rosy hue to meats, cheeses and fish. The natural flavour compounds released from the cherry tree impart a delicate balance of sweetness and depth, making it a favourite for everything from cold-smoked salmon to game and pork. As each tree species produces its own distinctive smoke profile, cherry lends a gentle but characterful finish. This fine Pro Q dust burns evenly in a cold smoke generator, adding a soft, aromatic layer of flavour without overpowering the food.
Each bag contains 200g of wood dust. 100g of dust provides 10hrs of cool, clean smoke.
It is essential meat or fish is cured prior to cold smoking - you can purchase our curing salts which contain full instructions on preparing your meat for cold smoking.
What to use as a smoke chamber?
Cold smoking really is very simple and many things lend themselves to being used as a smoke chamber. All you need is a little air flow in the bottom and somewhere for the smoke to escape.
