Cold smoking with apple wood brings a gentle, slightly sweet aroma that pairs beautifully with pork, poultry, cheeses and even vegetables. Apple is one of the softer fruitwoods, producing a mellow, rounded smoke that enhances rather than overwhelms. Different tree species release their own natural flavour compounds as they smoulder, meaning the choice of wood has a direct influence on the final taste. This fine Pro Q dust is perfect for use in cold smoke generators, giving a clean, consistent burn and a deliciously subtle orchard-grown depth of flavour.
Each bag contains 200g of wood dust. 100g of dust provides 10hrs of cool, clean smoke.
It is essential meat or fish is cured prior to cold smoking - you can purchase our curing salts which contain full instructions on preparing your meat for cold smoking.
What to use as a smoke chamber?
Cold smoking really is very simple and many things lend themselves to being used as a smoke chamber. All you need is a little air flow in the bottom and somewhere for the smoke to escape.
