Beech offers a clean, mild smoke with a light nuttiness that works beautifully with almost any food – from fish and poultry to cheeses and vegetables. As a native hardwood that grows exceptionally well in the UK, beech has long been used in traditional British smoking; we simply harness the natural flavour locked within its wood. Each tree species gives off its own style of smoke as it burns, and beech delivers a gentle, versatile profile that enhances without overpowering. This fine Pro Q dust provides a consistent, even smoulder in a cold smoke generator, making it a great all-round choice for balanced, subtle flavour.
Each bag contains 200g of wood dust. 100g of dust provides 10hrs of cool, clean smoke.
It is essential meat or fish is cured prior to cold smoking - you can purchase our curing salts which contain full instructions on preparing your meat for cold smoking.
What to use as a smoke chamber?
Cold smoking really is very simple and many things lend themselves to being used as a smoke chamber. All you need is a little air flow in the bottom and somewhere for the smoke to escape.
