Frequently Asked Questions
-
Cold smoking flavours food with smoke without cooking it. The smoke is generated away from the food and kept below around thirty degrees, so the food takes on the smoke while staying raw or cured rather than being cooked through.
-
It depends entirely on what you are smoking and how pronounced you want the flavour. A few hours will give a gentle note, while a longer smoke over a day or more builds something much deeper. Start shorter than you think and taste as you go, because you can always smoke again.
-
Milder woods such as apple and cherry suit delicate things like fish and cheese. Oak and beech are more assertive and stand up well to red meat and bacon. If you are starting out, oak is the most forgiving.
