SALAMI AND HERB STUFFED SODA BREAD

RECIPE: SALAMI AND HERB STUFFED SODA BREAD


AN AMAZINGLY SIMPLE WAY TO MAKE A GORGEOUS LUNCH OR PICNIC PLATE WITH MINIMAL INGREDIENTS

Add a small pack of charcuterie, a few herbs and maybe a tomato or two to a very simple fool proof soda bread recipe, et voila, a stunning lunch.

Serves 4


INGREDIENTS

  • 400g plain white flour

  • 1 tsp salt

  • 1 tsp bicarbonate of soda

  • 300ml buttermilk

  • 55ml water

  • handful of mixed herbs, chopped

  • handful tomatoes, chopped

  • 55g charcuterie, we like using Fennel & White Pepper Salami but this recipe works with all cured meat, chopped

 

METHOD

STEP 1

Preheat your oven to 220C. Place a baking sheet on the top shelf to get it nice and hot.

STEP 2

Sift the flour, salt and bicarbonate of soda into a large bowl. Make a well in the centre.

STEP 3

Mix the buttermilk and water together. Using a wooden spoon or a knife, stir the liquid gradually into the dry ingredients. The get your hands into the bowl and mix bringing it together to form a soft dough.

STEP 4

Turn your dough out on a well floured surface and pull at the sides until it forms a rough rectangular shelf. Sprinkle your charcuterie, tomatoes and herbs on top, then roll in to a log shape.

STEP 5

Place on to your baking sheet, scoring the top with a knife and dust again with flour.

STEP 6

Turn your oven down to 200C and bake on the top shelf for 35 minutes until lightly browned and hollow sounding when tapped underneath.

STEP 7

Transfer to a wire rack to cool.
