How to Build a Charcu-Tree

A FESTIVE THEMED CHARCUTERIE SHARING IDEA

O Christmas Tree, O Christmas Tree, have you ever been tastier? Or should we say, O Christmas Brie? We have carefully embellished a tree of grapes and olives with layers of West Country Cheeses and a whole host of our British charcuterie.

Serves 6

Ingredients

  • 1 carrot

  • 1 bunch of grapes

  • 4 large strawberries (can substitute for another berry)

  • 250g brie

  • 250g cheddar

  • 90g Sloe & Wild Garlic Venison Salami

  • 1 pack Beef Snacking Salami

  • 55g Dorset Chorizo Picante

  • 55g Purbeck Cider & Pink Peppercorn Salami

  • 50g Dorset Blue Vinny & Fig Salami

  • 50g pitted olives

  • 50g cornichons

Method

STEP 1

Up pack all of your charcuterie and slice thinly unless already sliced. Cut a star from a nub of salami to adorn the top of your tree.

STEP 2

Choose a large sharing board to build your tree, or, use a large piece of baking parchment in the centre of your table if you don’t have a board big enough.

STEP 3

Arrange all of your delicious nibbles in layers, trying to imitate branches of a Christmas tree, getting narrower towards the top. Add the carrot, sliced, at the base to look like a trunk.

STEP 4

You can make a charcuterie tree, or charcu-tree as large or small as you need depending on the number of people you are entertaining. One of our sharing platters works really well when making a tree for 4 or so people. You can add extra individual packs to make up the requirement of meat you need, or, double up on platters if feeding a large number.
